Ingredients
🍯 150g pitted dates
🌰 70g macadamia nuts
🥜 50g cashew nuts
🌱 1–2 tbsp ground flaxseed
🥄 1–2 tbsp peanut butter
🧈 1 tsp coconut oil (if mixture is too dry)
🍫 1–2 tbsp cacao nibs (adjust to taste)
Method

Soften the Dates (if needed): If your dates are firm or dry, soak them in warm water for 5–10 minutes, then drain well.

Add the dates, macadamias, cashews and flaxseed to a food processor. Pulse until the mixture is crumble but starting to stick together.
- Spoon in the peanut butter and coconut oil, then pulse a few more times until everything is evenly combined and holding together nicely.
- Stir in the cacao nibs by hand or give it one last quick pulse – just enough to mix without losing the crunch.

Scoop out tablespoon-sized portions and roll into balls with your hands. If sticky, chill the mixture for 10 minutes or lightly oil your hands.

Place the energy bites in an airtight container and refrigerate for at least 30 minutes to firm up.
